Many, many years ago, I tried guacamole. I liked it pretty well, enough to learn how to make it but I didn’t loooooove it.
Fortunately, I rarely give up on food (it’s my best/worst trait) eating it again and again until finally, I fall in love.
Like, I love it so much, I made it for myself on Mother’s Day.
I love it so much, I picked it for dinner on Valentine’s Day.
Eli and Noah have shared my guac love with me but Anna and Clara weren’t big fans. But then I found out the best/worst news ever!
They never actually tried it before. Say whaaaa?!
I made them try it and the rest is history. Clara despises mexican food. She knows once a week, it’s usually on the menu so she braces for it but never fails to let me know just how angry she is that we aren’t having REGULAR SPAGHETTI for dinner.
But guacamole? She loves it. Needless to say, I’ve made it four times in the past two weeks.
Look, I don’t mean to start any trouble but I’m just going to say this…I think it’s because I make the best guacamole.
But to be fair, I’m going to share the recipe with all of you, okay?
To start, ask your sweet and handsome teenage son to wash the vegetables and get the avocado out of it’s pesky shell.
It’s my mission to make his future person very happy by becoming fluent in guacamole making. You’re welcome future person!
My recipe makes quite a bit of guacamole. (for obvious reasons) But it doesn’t really keep well, so if you think it will be too much, well, cut the ingredients in half! Then the next day, make it again! (or bring some to my house, whatever works best for you.) (there are tons of tricks and tips out there to try to keep your guacamole from turning brown. Google it!)
An easy, delightful way to make guacamole. We love that we use only the freshest of ingredients for this recipe. What can be better than that?
Ingredients
4 avocados (ripe)
1/4 cup finely chopped red onion
1 finely chopped jalapeno
1 tbsp chopped cilantro
juice of half of a lime
1/2 cup chopped tomatoes
2-3 garlic cloves
1 tsp cumin
1 1/4 tsp salt
1/2 tsp pepper
Cut avocados in half, remove seed and scoop out of the skin. Mash up the avocado into a bowl, using a fork or spoon. Add the remaining ingredients. Stir and serve.
-for added heat, add seeds from Jalapeno, for less heat, do not add seeds
-feel free to add as many tomatoes, cilantro and onions as you wish. I do a lot of testing while making guacamole. (which makes it the best job ever!) I advise cut a bit extra and adding anything necessary
